Peanut butter cookies
Hello my lovely friends, today we're trying something full of flavor, crunchy and with the right balance of sweet and salty. I'm making my very own special recipe of peanut butter cookies. I'm going full on with the peanut butter flavor so let's try them together.
Ingredients:
200 g all purpose flour
50 g white sugar
50 g brown sugar
100 g butter
200 g peanut butter
2 eggs
1/4 tsp salt
optional, but definitely worth it: blanched salted peanuts
In a pan slowly melt the butter, peanut butter and salt stirring frequently so it doesn't catch at the bottom. You don't need to apply too much heat, just let the mixture melt almost all the way through and then use a whisk to give it a final stir.
Add the two sugars and bring the mixture to a creamy consistency whisking for another 2 minutes. In this way the mixture will also cool down sufficiently for the next stage.
Mix the eggs vigorously into the batter one at a time, to prevent it from splitting and then fold in the flour with a spatula, just until it comes together. When you're half way through the folding process sprinkle with chopped peanuts, if using. You will end up with a pliable dough, a bit oily in the beginning, but if you let it sit for ~ 1 hour in the fridge, you're good to go.
Shape the dough into small balls and put them on a baking tray lined with some parchment paper. Press it down with your fingers or a fork. The cookies will not spread too much so you don't have to leave too much space in between. Bake in a preheated oven at 190 C degrees for 15 minutes.
