How to make coconut milk
Because my previous post was about Golden Milk and how to prepare it, I thought maybe a basic recipe about coconut milk, is welcomed. Let's get started people!
Ingredients:
1 coconut
750 ml tap water
Everything is simple and without too much fuss. The only thing you have to do in the end, is to wash the blender, but we can live with that, right?
The coconut has three "eyes". In my experience one is easier to prick. With a pointy knife scrape the pulp (or use a corkscrew) until you make a hole big enough for the coconut water to drain. Pour the water into a glass and strain to remove any impurities.
To break the coconut put a kitchen towel on a hard surface and start smashing it with a hammer along the entire surface turning it everytime.
Continue hitting the coconut until it's completely broken in two halves. To release the pulp from the shell, use the tip of the same sharp knife you used in the beginning.
To make our milk, place the coconut pulp into the blender along with the water and start mixing at full speed for a whole minute, until everything is pureed. With the help of some cheese cloth (you can use instead a nut bag or a linen free towel), strain everything and squeeze hard to remove every last drop of milk.
Keep the milk in the fridge and shake before using. Don't throw away that moist pulp because I have an amazing cake recipe with it, store it in the freezer until ready to use.
